WHere is an easy take on a cocktail found on our latest cocktail list. This is a batch pre-mixed that is packed with tastes of a holiday season, making it ideal for your holiday party. Any leftover syrup you can use for brunch beverages, puddings, or to make additional servings of bikinis.
Bikini
Makes enough for 10 people
To make the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (makes 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Method
To prepare the Citrus Syrup: Combine all the ingredients inside a saucepan, bring to a light boil, agitating to dissolve. After that, turn off the burner and leave to reach room temperature completely. Pour into an sterilised bottle, cap it and store in the refrigerator, it will last for around one month.
To make Batch Mix: Pour every liquid ingredients into one big jug, allow it to infuse for one hour, then strain , ideally through a fine cloth, to ensure it's completely strained.
For serving: Add 85ml from the premix to a stirring glass containing ice, gently stirring lightly for a minute to chill. Strain into a chilled martini glass or similar, decorate with some cranberries and finish using a quick spritz of the essential oil over the top.
